24 mm LEEDS LANTERN FROM THE KITCHEN WITCH Heather McNally Pcrtlandâ€"onâ€"theâ€"Rideau A Summer Supper Tomato Biscuits Sift together 1 cup flour 1 tbsp baking powder 3/4 tsp salt and combine it with 1 cup whole wheat flour ‘/4 cup fresh grated Parmesan cheese Vz tsp oregano. Stir in 2/3 cup tomato juice 6 tbsp butter, melted and cooled and form the mixture into a smooth dough. Turn the dough out onto a floured surface and knead it for 30 seconds. Roll out the dough V2 inch thick and cut into 2 inch rounds. Put the rounds on a baking sheet, brush with melted butter and bake in the upper third of a very hot oven (450°) for 10 to 12 minutes. Makes about 16. Chilled Cream of Cucumber Soup 3 tbsp butter or margarine 3 cups sliced leeks, white part only 3 tbsp flour 6 cups water, divided 4 cups diced, peeled potatoes 1 tbsp salt V4 tsp white pepper 1 cucumber, seeded, grated 2 cups milk 1 cup heavy or whipping cream Chopped chives, for garnish In 4-quart saucepan, melt butter over medium heat. Add leeks; saute 5 minutes. Blend in flour and cook two minutes, stirring constantly. Do not allow to brown. Remove from heat. Gradually stir in 1 cup water until blended. Stir in remaining water, potatoes, salt and pepper. Bring to a boil; reduce heat and simmer, partially covered, about 40 minutes. Remove from heat. Puree in batches in food processor or blender. Pour in large bowl; stir in cucumber, milk and cream. Cover and refrigerate overnight. When ready to serve, add ‘A cup cold milk, if needed. Taste for seasoning. Garnish with chives. Makes 11 cups, about 185 calories per cup. Fruit with Devonshire Sauce 2 packages (3 ounces each) cream cheese 2% cups milk 1 package (3 3/4 ounces) vanilla instant pudding mix 1 tsp lemon zest Fresh berries or drained canned fruits Soften cream cheese; gradually blend in milk. Beat in pudding mix and lemon rind. Spoon over fruits or layer with fruits in serving bowl. This is also nice with a fruit liqueur. After Dinner Light Delight 2. scoops dietetic vanilla ice cream 1 oz brandy and 1 oz Amaretto Blend at low speed until smooth and serve in brandy snifter.
