The following are the most commonly requested and I am using them in the summer column because a cream liqueur is delicious in iced coffee or in a tall glass of iced soda water. The pies are cold desserts and definitely not the type of cooking to share with junior. The following recipe was a gift from 'Elsie' of the Borden Company to the 1984 International Association of Cooking Schools convention in Toronto. Cream Liquor 1â€" 3/4 cups liquor (Irish whiskey, brandy, rum, bourbon, scotch or rye) I can (14 02) Eagle Brand Sweetened Condensed Milk (not evaporated milk) lfiâ€"cup whipping or coffee cream 4 large uncracked eggs 2 tbsp. chocolate-flavoured syrup Ztsps. instant coffee 1 tsp. vanilla extract 1/2 tsp. almond extract In a blender container combine all ingredients; blend until smooth. Serve over ice if desired. Store tightly covered in the refrigerator for up to one month. Stir before serving. Preheat oven to 325° . In a medium bowl, combine crumbs, ‘A cup of the sugar and the melted butter until mixed. Scrape into a 9â€"inch pie pan and pat into crust. Bake for 10 minutes until slightly crisp. Let cool for 5 minutes then refrigerate uncovered till cooled. 2. Place 1/2 cup of cold water in a small saucepan and sprinkle in a gelatin. 3. In a medium bowl, beat the egg yolks with 1/2 cup of the sugar until thick and light coloured about 1 minute. Beat in the liquor and creme de cacao. 4. Warm the gelatin mixture over low heat stirring occasionally until dissolved. Gradually add to the egg mixture, beating until smooth. 5. Beat the heavy cream until soft peaks form. Add the remaining 2 Tbsp. sugar and beat until stiff peaks form. Stir about 1A of the cream into the egg mixture to lighten it. Fold in the remaining cream until well combined.
