Signage will be out across town! Plant-Based Eating by Sheree Nicholson Barbecue Season Challenges The summer season's family reunions and backyard barbecues can pose challenges. The dilemma is, what do you cook for your vegetarian or vegan family members or friends? The easy way is to serve soy burgers, which are okay, but they are highly processed and, frankly, are a bit dry even at the best of times. What I do when entertaining meat-eating relatives is to use my main dish for their side dish. So I cook them meat and I grill veggies and portobello mushrooms for me and the other vegans in my family. I serve the grilled veggies on a large platter as the side dish to the meat and then use the grilled veggies for wraps or sandwiches for those who don't eat meat. That way I'm not stressing about cooking two entirely different meals. My favorite marinade recipe is from the Oh She Glows cookbook, which I've adapted a bit over the years. I use portobello mushrooms, zucchinis sliced from end to end, red, yellow and green peppers cut in quarters, and lately Chinese eggplant and Ontario asparagus, which is in season right now. You can marinade the vegetables overnight or for at least an hour. Sometimes I marinade them in large freezer bags so they don't take up too much space in my refrigerator and it's super easy to turn them. After grilling the veggies, I serve them on a large platter. It's an impressive looking dish. If you want to make wraps, just lightly grill the wraps, spread with hummus or guacamole, top with sliced grilled veggies and roll 'em up. You may need toothpicks to hold them together. I took these wraps to a family reunion last year and they were a huge hit. I'm in love with Farm Boy's wide range of hummus types and their new Kale-A-Mole. The Basic Recipe 2 medium portobello mushrooms 2 tablespoons balsamic vinegar 2 tablespoons fresh lemon juice 1 tsp lemon zest (optional) 2 tablespoons extra virgin olive oil 1-2 cloves garlic minced (2 cloves is very garlicky) 1 teaspoon dried oregano 1 teaspoon dried basil Pinch of dried red pepper flakes Salt and pepper to taste Prepare the mushrooms by washing them and removing the stems (give the stems a little twist and they pop off). In a large bowl, whisk together the vinegar, lemon juice, lemon zest, oil, garlic, oregano, basil, salt, red pepper flakes and ground salt and pepper. Add the portobello caps and toss to coat them in the marinade. Marinate the mushrooms for at least 60 minutes, rotating them every once in a while. You can also marinate them overnight. Double the marinade recipe and add the red, yellow and green peppers. Triple the marinade recipe and add a small zucchini sliced long ways for grill- ing. Sheree's Hack: Prepare and marinade these the night before to save time and also for a more flavourful dish.
