THE HEART FUND Chin dripping good - that's an Ontario peach! Fresh juicy peaches are on the market now through August and into the first part of September. So get some soon, and enjoy theni while they're in season. For fresh eating, choose peaches that are fully ripened. Look for a creamy yellow background color and peaches that yield to gentle pressure, when held in the hand. But don't pinch them - they bruise easily. Ontario peaches are great for eating just as is. Simply wash - and enjoy. They don't even need to be peeled.' That makes them easy to carry along on picnics and for snacks. For bowls of fresh slîced peaches, you may prefer to peel theni. To do this quickly, plunge peaches into boilîng water for 30 seconds, then dip in cold water. Slip off skins. While slicing peaches, sprinkle with a littie lemon juice to prevent darkening. Toss peaches with somne sugar and chili slightly before serving. Fresh peaches can be enjoyed for breakfast, lunch and dinner - ail through the season. Serve themn not only raw, but cook some in your favorite recipes too. Peaches poached in white wine and honey are elegant for brunch. Peaches are also great in crisps and cobblers and don't forget - delicious peach pies.
