Owned by Jim and Carolyn Sheridan, the Whitby store is the l2th Paper Factory to open in On- tario. "We have had this store in mind for a while and after a survey"of the area we decided to locate heire,~' says Jim Sheridan, previously a bank manager in Stoney Creek for 15 yeears before he purchased the store. His wife, Carolyn, managed a Paper Factory in Stoney Creek. So it was just a natural extension for the couple to open their own store. "We have a lot of family and friends in the area and we had a desire to get on this side of Toron- to," says Jim about the store location in Whitby.1 The store offers supplies for any occasion, ranging from New Year's to Valentine's Day to birthdays with' discounts for churches and schools. Fifty years ago, William Smith. established Smitty's in Calgary. Mf- ter his death, bis widow sold the shares to Walter Chan who began the franchise operation. Sumeet Shahi manages the Whit- by store at 114 Dundas St. E. with about 30 employees both full-time and part-time. Specializing in pan- cakes and all-day breakfasts, Smit- ty's also has a wide variety of lun- ches and dinners ranging from their "Rocky Mountain Burger" to a seafood platter, with homemadeý desserts,, including pies baked on* the premises. Catering to the downtown public of Whitby, Smitty's has chosen a practical area for the new restaurant. "We thought it would be an ex- cellent area for business," says Shahi. William Pump, owner of the Whitby restaurant, has been with Smitty's since 1973 and thought the restaurant would do a lot better in the heart of Wbitby. "Whitby has a lot of activity," says Pump. By BRYCE COOPER Louie and Charlene Stefanis are back in business. After taking a year off the couple returned in 1987 with a new restaurant, Burger Express, on Brock St. S. And next door, their former employee, Brenda Alexan- der, bas opened Love's, a sub- marine sandwich and ice creamn shop. The Stefanises have owned many- small restaurants. Alexander managed their last one, a Square Boy Pizza parlor in Oshawa. The three dlaim the Oshawa restaurant was a success and look for the same results in Whitby. Burger Express is on the proper- ty formerly occupied by West Lyn- de Burger. After 10 montbs of renovations inside and out, Burger Express opened in time last year to capture summer business. "Because of the growtb in Witby the area bas good potential," says Louie Stefanis. Alexander sees -no tbreat in ber business from competitors in Wbit- .by. "Once they try my subs they'1l be back, " she says. Winter is a slower business period than usual but the tbree look forward to another good spring, summer and faîl.
