He was a wealthy merchant who also served as Centre Ward Councillor in 1857. Other noted owners of the house were James Hamilton, Edward Johnson and Cephas Seldon. aIl of whom were prominent businessmen. Cephas Seldon also served on Whitby Town Coun- cil in 1926-27. Architectural The George Wallace House is an excellent example of Ontario vernacular cottage design. Golden Apple-Mincemeat Cake 3 cups flour 4 teaspoons baking powder 1 teaspoon cach ground ail- spice and cinnanon ½ teaspoon sait -½ cups oil 1-½ cups packed brown sugar 2 cups grated Golden Deli- cious apples 1 cup prepared mincemeat ½ cup chopped pecans !-½ teaspoons vanilla 3 eggs I to 2 tablespoons powdered sugar Combine flour, baking powder, all- spice, cinnamon and salt; set aside. In large bowl of electric mixer, combine oil and sugar; beat well. Add half of dry ingredients; mix well. Blend in grated apple, mincemeat, pecans and vanilla. Add remaining dry ingre- dients. Add eggs, one at a time; beat well after each addition. Turn into greased 10-inch fluted tube pan. Bake at 3500F. i hour or until wooden pick inserted near center comes out clean. Cool in pan 15 minutes; turn out on wire rack. When cool, dust with pow- dered sugar. If desired, cake can be served slightly warm with Hard Sauce. Makes 12 to 16 servings. Hard Sauce: Beat 1/2 cup softened butter on high speed until light. Gradually beat in 1 cup powdered su- gar. Stir in 1 tablespoon brandy. Refrigerate 1 hour.
