In most parts of Canada the first crop of big white onions, known as "boliers", begin to appear in August and continue to develop until laie October. Take advantage of this fall's bounty of nutritious vegetables and prepare Stuffed Onions as a luncheon or supper dish. Joan Fielden, Bakery Counçîl of Canadas Nutrition Consultant, has a modemn ver- sion of this dish, inherited f rom an older generation. She says it does not put on airs, but blends flavours made to go together. It combines îust the right amnount of sausage meat and soft enriched bread crumbs, highlighted with tomatoes, green peppers and celery, and is topped with Canadian cheddar cheese. Served with a tray of piping hot Brown 'n Serve rolls and relish tray, a faîl luncheon or supper meal is complete. For a sweet touch, have a fresh bakers pumpkîn pie for dessert. When you serve this well- balanced meal of wholesome fresh vege<ables, meat, cheese and enrîched baked goods, you know that you are helping 10 keep your tam/yv healthy for those energetic, leaf-raking days. Stuffed Onions 1 cup 1/2 poundl sausage meat 2 tablespoons sausage drippings 2 tablespoons chopped green pepper 1/4 cup chopped celery bread crumbs 1/2 cup chopped cooked onions 1/4 teaspoon sait 1/2 cup canned tomatoes 1/3 cup grated Canadian cheddar cheese Pierce onions through the centre wîth a fork Io retain shape. Cook in boiling salied water for 20 minutes. Drain. remove centres and chop, Cook sausage slightly and pour off aIl but 2 tablespoons of drippings. Add green pepper and celery and saute until tender. Combine with sof t enriched white bread crumbs, onion centres, saIt and tomatoes. FilI each onion shell wîith 1/4 cup stuffing. Place on a greased, shallow bakînq pan. Sprinkle about 2 teaspoons grated cheese over the top of each onion. Bake in a moderate over (350()F.)I for 20 minutes. Yeld: 8 - 10 stuffed onions.
