At the grill, cook Shahr- zad uses a bamboo hand fan called a bad bezan to temper flare-ups. "We want to control heat and keep the flame off the meat," Ferdos says. On the stove is a pot of rice with a large pillowlike piece of equipment that serves as a cover: known as a damkoni, the pillow sim- ply but effectively absorbs steam from the cooking rice that, on a regular pot lid, would condense and drip into the rice, ruining its fluffiness and starch structure. The resulting basmati has a perfect texture ac- companying its fragrance, to which saffron is then added as pomegranate seeds garnish -- both tasty and visually appealing. Joining the kebabs are a house-made Persian-style yogurt sauce, a tender and mildly vinegared red cab- bage salad, and onion and parsley sprinkled with su- mac. Lest you think the bite of raw onion salad is too strong, its pungency is moderated by -- and actu- ally negotiates seamlessly with -- the meat and rice, elevating the layers of fla- vour. "Persian people," ac- cording to Ferdos, "love eating koobideh with on- ion, parsley and sumac." Should they try it, I imagine a lot of people here will agree. Ce Food Experience of- fers a wide, and often changing, variety of sweet and savoury goods includ- ing fresh bread, scones, bis- cuits, brownies, cake, muf- fins, turnovers and cook- ies, as well as an assort- ment of breakfast and lunch options including sandwich specials, quiche and pot pies. "We have something de- licious for everyone -- even those with dietary restric- tions," said owner Cecelia Johnston, in a press re- lease from the Uptown Wa- terloo BIA. "The bakery has a daily assortment of vegan, glu- ten-free, dairy-free, egg- free and nut-free baking." Johnston (Ce) started her business almost seven years ago at the age of 20 in a 300-square-foot ware- house space on Victoria Street in Kitchener. She then moved the bakery to 136 Moore Ave. S, where she stayed for six years, ex- panding her clientele and evolving her business mod- el. "We needed more space, improved accessibility and better exposure," said Johnston, a wife and moth- er of two, who wanted to maintain a work-life bal- ance in Waterloo. After a few years of looking for the perfect spot, she found it on the main floor of the city's adminis- trative building at 100 Regi- na St. S. "Our new space has an updated kitchen complete with larger preparation, storage and production ar- eas -- it's so spacious and airy with many windows and our new patio," she said. The patio that wraps around the corner unit was created by Johnston her- self with wood fencing, ta- bles, stool chairs and benches, so people can stop and sit enjoy the treats they purchase inside. The bakery is open from Monday to Friday, 8 a.m. to 4 p.m. NEWS BAKERY NOW OPEN IN WATERLOO CITY CENTRE Ce Johnston of Ce Food Experience sitting in their Game of Scones chair. Uptown Waterloo BIA
