Wherever it might be eaten, the stuffed dhalpuri roti I tried was delicious and very filling. "We also prepare a plain paratha roti, which in Trinidad is called buss up shut," according to Patel. So here's what to do: pick something from the two dozen or so menu items (rice dishes, chicken, goat, lamb and potato / channa for vegetarians), get it packed up tightly and find a small patch of green space to enjoy an outside nosh while the fall weather still has a touch of warmth. I found a bit of hillside beside a church nearby and happily munched a roti, a doubles (always plural) and some phulouries (which I've seen spelled a variety of ways). It was a lot to eat and the cost was be- low $20. The phulouries were a favourite of mine. "They are fried dough balls made with all-purpose flour and yeast and you dip them in a tamarind, mango or pep- per sauce," Patel says. "Tra- ditionally, it is usually eat- en in the morning for breakfast." Fried dough with a tam- arind sauce? I could easily enjoy that any time of the day. Opening a restaurant -- or any kind of business -- during a pandemic is tricky stuff, no doubt, but Patel is happy with the traf- fic he has seen through the doors to the small venue since their grand opening in mid-August. "We have Trinidadians, Jamaican customers, some Chinese people sometimes and white Canadians. Indi- ans too, like people from Punjab, come for doubles," says Patel, adding that he's happy with the way Mad- hu's is growing in its plaza location. "It's very good," he says. "We're very busy."
