All members of the public are invited to attend the committee meetings. The goal of the Committee is to identify operational problems that affect local residents such as litter, odour and noise and to resolve those issues in a cooperative manner. The next meeting of the Waterloo Region Landfill Liaison Committee is scheduled for 7:00 p.m. on Tuesday, February 4, 2020 at the Waterloo Landfill Administration Building, Gate 1, 925 Erb Street West, Waterloo. Stella Mandalas runs A Taste of Greece at the St. Jacobs Farm- ers' Market, located in the Ped- dler's Village building, serving up delicious and traditional Mediter- ranean cuisine like gyros, chick- en and pork souvlaki, spanakop- ita and baklava, Greek salad, and their authentic tzatziki sauce. Simple yet flavourful, I love their delicious veggie pita with fresh tomatoes, cucumbers, green peppers, and their amazing tzatziki. "Since both my parents were born in Greece, they were taught how to cook by their parents and they passed all these recipes down to us," she said. "Our grand- parents taught us how to cook as well, and we keep everything as authentic as we can with all the spices and seasonings. "Everything is homemade and I love to cook. It brings me joy to see people enjoy our food." It is clear from the hubbub around Stella's counter, even on a cold winter day at the market, that many other families love their traditional Greek cuisine as well. "We opened up A Taste of Greece 24 years ago, and we still have original customers who come every Saturday morning at 9 a.m. for breakfast," said Stella. "Their kids come for breakfast and now the grandkids come." Her father Evangelos Patri- kas' leather shop, Yiotas Leather - the family's first business at the market, selling Canadian-made leather belts, gloves, skirts, jack- ets, coats, and accessories for the past 33 years - is down at the other end of Peddler's Village. Over in the main market building is Olive DiVine, run by Stella's mother Yiota, who opened her business seven years ago, and specializing in fine olive oils and balsamic vinegars. "Mom and Dad help me with all the prep work, and when I'm really busy at lunch time, Mom leaves her booth and comes over to help," said Stella, whose hus- band works with her as well and always makes it a priority to en- gage with customers at their busy counter. "We build one-on-one relation- ships, and the next thing you know we have regular customers who introduce us to their chil- dren," said Stella, who took a break to chat with longtime reg- ulars having breakfast with friends from out of town. "Our parents did a really good job raising me and my sisters," she said, "not just by teaching us about family values, but also showing us through example how to be business-minded and about the benefits of helping each other out and having a strong work ethic." Our community should take pride in welcoming entrepre- neurs like Stella's family, and feel lucky to have their delicious Greek recipes to eat.
