In general, the scheduled work includes the replacement of sanitary sewers, storm sewers, watermains, sidewalks, curb and gutter, road base and asphalt pavement for the full extent of the project. This is subject to City of Waterloo Council approval. Weather permitting and pending Council approval, construction will start in early April 2020, with substantial completion expected by the end of November 2020. Most restaurants focus on food and match dishes with drinks. "We do the opposite. We focus on wine and pair it with food," says Jean- Claude Boulos, an engi- neer by profession who opened the first Wineolo- gy in Windsor almost five years ago as a side gig. The business has since expanded to three loca- tions, including Kingston and Tecumseh, with Kitchener being the fourth, slated to open in late October/early No- vember at 89 King St. W. Wineology will be in a 3,000-square-foot space on the main floor of the new- ly redeveloped building that dates back to the start of the 20th century. The Kitchener loca- tion's owner/operator Mat Mathias said the de- cor is going to be unique with just about every- thing inside, including the furniture, chandeliers and bar tops, handmade in Columbia. "So it will have a way different feel you won't see elsewhere," he said. Wineology aims to cre- ate an inviting ambience, without pretense. The wine list features a wide selection of imports, many of which Boulos has discovered during his trav- els to vineyards across the globe - with bottles ranging in price from just under $30 to more than $500. Wine can be intimidat- ing if you don't know about it, concedes Math- ias, who said the Kitche- ner location will be mod- elled on the Windsor loca- tion, offering tasting flights and wine tasting 101 courses. "We also have a wood- fired pizza, which Wind- sor is known for," said Mathias. "We're going as far to bring water from Windsor to make the dough, because there's something about the make of the water." There are seven spe- cialty woodfired pizzas. "Mat's" comes with olive oil, mozzarella and goat cheese, sun-dried and fresh tomatoes, garlic and basil, "JC's" with Tomato sauce, goat and mozzarel- la cheeses, figs, prosciutto and fresh arugula.
