I love doing food and wine pairings and have put together a few suggestions as well. These salads are paired with inexpensive, easy- drinking, fun wines that will be sure to delight everyone. The forecast is for another crazy summer this year and so we had better be prepared. Let's show-off our kitchen skills as well as our taste in wines. Beets with Mandarin Oranges This is really pretty and makes a slightly different salad. 1/3 cup of sugar 1 ½ teaspoon cornstarch 2 tablespoons of lemon juice ½ cup of KenRidge Classic Riesling (Pour yourself a glass while you are cooking) 2 tablespoons butter 1 can of Mandarin Oranges, drained 2 cans (1 pound) of small whole beets In a saucepan combine sugar and cornstarch. Add lemon juice and wine: stir until well blended. Add butter and cook over medium heat, stirring until it boils and thickens and becomes clear. Remove from heat. Combine oranges and beets in a sauce pan. Pour the sauce over the vegetables and cook slowly over a low heat. Stir often. This will serve 6. Serve this with a delicious chilled Cheeky Monkey Pinot Gris. This next recipe is great with BBQ steak or a big juicy burger. Serve this one with a Cheeky Monkey Sangiovese Syrah. Cheese Onion Rings 6 large onions, sliced and separated into rings ½ teaspoon each of salt, sugar and freshly ground pepper 5 tablespoons butter ½ cup of KenRidge Classic Chardonnay 2 tablespoons of grated Parmesan cheese Season onion rings with salt, pepper and sugar. In a frying pan sauté the rings in butter. Add the Chardonnay and cook rapidly for 3-5 minutes. Sprinkle with the cheese. Makes 6 servings.
