In those days people had one of the basic cookbooks that touched on everything: The Joy of Cooking or Fannie Farmer. For my mom the Chatelaine Cook- book was her source of reci- pes, for my dad a cookbook he brought with him from Germany. Then there was a shift. Edna Staebler published Food That Really Schmecks, a cookbook of Mennonite food and culture. It was a must in every Water- loo Region household. I would eventually inherit a few copies through the years. Around the same time, the cooking world was thrown on its head with the arrival of Mastering the Art of French Cooking by Julia Child, Simone Beck and Louisette Bertholle. Suddenly my parents were having dinner par- ties and Chicken Cordon Bleu always seemed to be the entrée. I was alert to this change in cuisine. I had already been climb- ing up onto the kitchen coun- ter where I would sit for hours pouring spices and herbs into my palm and tasting them. Then when I was a young teenager my mom wanted to buy me a cookbook. She insisted it be one of the old standards but it was too late -- I had tasted inter- national cuisine. I had experi- enced risotto and boeuf bourgui- gnon from Julia Child, beef rou- laden and lentil soup from my dad and beef croquettes and Nasi Goreng from my mom's Dutch friend. Crepes had become a staple in our house. Th ere was no turning back. My mom and I met half way and I had my fi rst cookbook: the Betty Crocker International Cookbook. Th en in my twenties I could not get enough of the Silver Palate Cookbooks. My friends and I were introduced to foods we'd never heard of before. My generation now had their go-to cookbooks and chicken marbella became the new standard entrée. It seems hard to believe now but for many of us, Th e Silver Palate was our fi rst introduc- tion to pesto. Th e Moosewood cookbooks were also a hit with my generation and I made a pilgrimage to the Moosewood Restaurant in Ithaca, New York where it all began. Maybe every generation claims their favourites. Today vegan and vegetarian books such as Oh She Glows and Th ug Kitchen are popular. But in a world saturated with cook- books, a book has to stand out and that is what happened when I discovered Bitter: A Taste of the World's Most Dangerous Flavour by Jennifer McLagan. This is a book with recipes, but also includes the fascinating history and science of why our reaction to bitter can be so extreme. It tells how a bitter food added to a dish gives it depth and complexity and how we all are dif- ferent in our responses to bitter taste. Like the author, I too was pulled to the dark side early in life with the intense bitter- ness of white grapefruit -- now a thing of the past.
