This is a handwritten biography of David Kuntz from the Ellis Little Papers. This biography has been transcribed exactly as written. Ellis Little was a local historian, who was the principal of Elizabeth Ziegler Public School.On his retirement, he invested much of his time in researching and writing about Waterloo's history. The Ellis Little Papers consist of extensive notes, papers and historical works.

The Kuntz family came to Waterloo from Wiesbaden Germany in the 1830s. Two brothers, David and Jacob, had been apprenticed as brewers and coopers in their homeland and both continued in the same line of business after emigration. Some time after arriving, Jacob moved up to Karlsruhe in Bruce Co. where he built and operated a brewery. David remained in Waterloo, running a small brewery in 1844 at King N. and Princess Sts. When the Hoffman survey was completed in 1855, he purchased several lots in the vicinity of King S. and William Sts. In 1864 he began construction of a small brewery on one of these lots, Spring Brewery from natural spring water. He did most of the work himself with help from mason Gerhardt and Schwann. The bricks were made from deposits of clay from the Allen St area that later became the Bechtel Brickyard. It is said that he made beer in his brewery during daytime and peddled it to his customers in town during the evening. The brewery grew as his product became more popular and the number of hotels in town increased. His son Louis helped around the brewery when he was old enough. In 1874 he constructed the Alexandra Hotel at the corner of King S and William Sts. directly across from the brewery. He died.
