My son harvested some massive zucchini from his garden this week He was anxious to try it but decided very quickly that he didn‘t like it raw. L decided to turn it into zucchini bread. One problem, I was missing some ingredients. L used applesauce instead of my usual sour cream and it turned out every bit as good as the original. This got me thinking about sub stitutions. If you like to cook you always have those times when you don‘t have an ingredient the recipe calls for, or maybe it‘s an obscure ingreâ€" dient that you can‘t find. Sometimes it‘s an ingredient that you can‘t eat for healthâ€"related reasons. Substitutions can and need to happen sometimes when you cook. * One little trick I have used on more then one occasion is making your own buttermilk, or a workable substitute. Don‘t be afraid to make substitutions if you can‘t find the right ingredient for your favourite recipe To one cup of milk, add one tablespoon of fresh lemon juice or distilled white vinegar. Let this sit for about 15 minutes. As a substitute for fresh garlic, you can use minced garlic in a jar.
