Eventually his Spring Brewery occupied the land between King and Park streets south of William. In the early days, Kuntz made his own beer kegs and delivered them, ponderously full, in a wheelbarrow, to local customers. By 1910, likely still imbued with its founder‘s staunch worth ethic, the Kuntz Brewery had become the second largest in Ontario. Carling‘s in 1929, then Labatt‘s in 1977, presided over the demise of both the name Kuntz and the extenâ€" sive Waterloo plant itself. A part of the underground maiting and brewing chamâ€" bers was recently excavated and "rehabilitated". Now an exotic adjunct to the Lion Brewery Restaurant, the long, stoneâ€"vaulted room gives a glimpse into the expanse and ambience of a 19thâ€"century brewing operation. Although both Kuntz and Seagram have gone, the spirit of the rich aroma of brewing yeast still remains real in the air over WaterlOo. Terence Scully, a member of the municipal heritage committee, will be writing throughout 2007 to celebrate Waterloo‘s 150th anniversary.
