The food was exceptional; no doubt part of the reason was the garlic. For those who know me well, they know that garlic is undoubtedly my favourite ingredient. There are obvious reasons for this. It makes the once strong, bitter taste sweet. One of my favourite ways to use roasted garlic is to combine it with butter and use it to sauté shrimp or to top a grilled steak. To roast garlic, take a whole bulb, cut the top off, leaving the root end in tact. Drizzle olive oil over the bulb and place it on a cookie sheet and bake it at 350 degrees for 30 minutes. If you aren‘t sure if it‘s done, just squeeze it gently. 1t will feel soft. Once it cools, squeeze out the garlic into an airtight container; it will keep in the refrigerator for a couple of days. The ways you could use roasted garlic are as vast as your imagination You can use roasted garlic to make garlic puree. Roasted garlic puree can be used in salad dressings, in tapenades, dips, or brushed on crostini topped with a sliver of proscuitto. To make garlic puree, simply take the roasted garlic and combine it in a food processor with a little bit of olive oil. Mix just until comâ€" bined. Why garlic the stinking rose? Other kinds you might see are purple striped garlic These are smaller with a stronger taste. This kind is particularly good for roastâ€" ing. Other more rare varieties are silver skins. which are the ones you see braidâ€" ed. This vaniety is very strong in taste. Creole garlic is the best kind of garlic to eat raw as it‘s much milder than other vanieties Stare your garlic in a cool dark place but not the refrigerator. Next, arrange basil leaves over the cream cheese. Place one slice of proscuitto over the basil horâ€" izontally, Add the peppers, sunâ€"dried tomatoes and olives. Top with Parmesan. Roll up tightly by first folding over the sides, then roll upwards. â€" Repeat â€" with remaining three flour torâ€" tillas. If you are planning to serve these right away, slice wrap into four diagonal slices, arrange on a platter. If you are going to serve them later, wrap each wrap indiâ€" vidually in plastic wrap and refrigerate. Slice them just before serving.
