It altso means hockey, ballet and all the other after school events are going to take away from your cookâ€" ing time. So with that in mind 1 thought I‘d offer up some fast easy and tasty recipes that can be made in 30 minâ€" utes or less. What‘s more comforting than a bowl! of stew? You start feeling warm the minute you set this oneâ€"pot dish to simmer on the stoveâ€" top, or in our case we‘re going to make it in 25 minâ€" utes or less, not three hours. As the herbs infuse, the aroma wafts throughout your home and the good feeling just grows. The first forkful reconâ€" firms that stew is comfort food at its very best. What‘s more, it can comfort you all over again the next day with easyâ€"toâ€"reheat leftovers. Deliciously served with crusty bread to mop up the flavourful sauce or over a bed of noodles. One of my favorite kitchen tools {I use two of them) for making great tastâ€" ing food such as stew in a hurry is the pressure cookâ€" er, or as | like to call it, the microwave of the 50s. While microwaves are good for some things, such as reheating they can‘t comâ€" pare to the pressure cooker when it comes to making beef taste like it‘s been simâ€" mering for hours in just 25 minutes. There are only a few basic rules you HAVE to folâ€" low when using a pressure cooker. One is you only use a little liquid (1 or 2 cups of water or stock}. Two, never fill the cooker more than two thirds full; and three, never leave the pressure cooker unattended. You can make this stew in less than 30 minutes if you use a pressure cooker in place of the long method I have provided. See my notes at the end for pressure method. 1 4 Cup (50ml} allâ€"purpose flour 1 teaspoon (Smi) salt 1 #2 teaspoon (2ml) freshly ground pepper 2 lbs stewing beef, cut into 1 1/2 inch (4 cm} cubes Oldâ€"Fashioned Beef Stew I use a blade roast and cut in cubes 2 Tablespoons{25ml1} vegâ€" etable oil (approx.},divided 2 medium onions, chopped 3 cloves garlic 1 teaspoon (Sml) dried thyme leaves 1 teaspoon (Sml) dried marâ€" joram leaves 1 bay leaf 1 cup (250m1) red wine (or if you‘d like to make Irish Stew one can of Guinness or dark beer) 3 Tablespoons{(25mi} tomato paste (I freeze the leftovers Combine flour, salt and pepper in a heavy plastic bag. In batches, add beef to flour mixture and toss to coat. Transfer to a plate. Fransfer to a plate. Reduce heat to mediumâ€" low. Add onions, garlic thyme, marjoram, bay leaf and remaining flour to pan; cook, stirring, for four to six minutes or until softened. Add wine and tomato paste; cook, stirring, to scrape up brown bits. Return beef and any accumulated juices to pan; pour in stock. Bring to a boil, stirring, until slightly thickened. Reduce heat, cover and simâ€" mer over mediumâ€"low heat, stilling occasionally, for one hour. In the meantime, peel carrots and halve lengthâ€" wise. Cut carrots and celery into halfâ€"inch chunks. Cover and simmer for 30 minutes. Trim ends of beans and cut into twoâ€"inch lengths, stir into, and add more stock if necessary, until vegetables are covered. Cover and simmer for 30 minutes more or until vegâ€" etables are tender, Remove bay leaf and adjust seasonâ€" ing with salt and pepper to taste. If you use the pressure cooker in place of the Dutch oven after you have softâ€" ened the onion, garlic, thyme, marjoram, and bay leaf, remove all these items and set aside. Put the browned beef back into the pressure cooker and add two cups of stock. Put the lid on the cooker and bring up to pressure as per instrucâ€" tions. Cook for 25 minutes then cool. Put all of the onion mixture back into the cooker on medium heat and continue cooking for 10 to 15 minutes. Look after your loved ones. Your job will be there when you get back.
