She warned that even though she conducted bus tours to Mexico at least once a week, no two tours were ever the same. Every trip presented surâ€" prises. Fresh coffee was to be available in the mormnings on each floor of the hatel. Sometimes it was only available on the main foor. Sometimes it wasn‘t available at all. Two hotel breakfasts are always included in the tour. Sometimes it is a full breakâ€" fast, sometimes continental. No one knows which it will be until they arrive in the dining room. On one occasion Cheri booked a special lunch for her group at a restaurant overlooking the harbour. She made the arrangeâ€" ments with the restaurant owner. When the group arrived the restaurant was closed. Cheri and the bus driver had to scramble to find another location. Plans are made. Plans change. It‘s always an adventure. Cheri also explained that there was often a shortage of face cloths in the hotel. Our room overlooked the swimming pool, the thatchâ€" roofed hot tub, the beach and the endless blue of the Sea of Cortez. There were face cloths in the bathroom. There was a television. We turned it on. There were two Englishâ€" speaking channels and two Spanish. When we went to turn the television off it wouldn‘t cooperate. We both pushed the power button several times. Finally we pushed the mute button thinking we might have to spend the night with the picture glowâ€" ing in the dark. Maybe this was to be our Mexican surâ€" prise. On our way out of the room for dinney we noticed a very large switch on the wall behind the television. Just below it there were two big red letters. TV,. We flipped the switch; the television turned off. Sometimes things are not as we expect them to be. This cold vegetable chili is a very pleasant surprise. Place the stewed tomaâ€" toes in a large bowl. Break up any large pieces with a sharp knife. Drain and rinse the black beans. Add the black beans to the tomatoes. Finely dice the onions and add them to the bowl. Add the salsa, chili powder and lime juice. Stir the ingreâ€" dients together and serve. 1 (14 ounce) can stewed tomatoes 1 (15 ounce} can black beans 3 tablespoons finely diced onion 3 tablespoons mild salsa 374 teaspoon chili powder 1 172 tablespoons fresh lime juice This can be made ahead and refrigerated. . â€" (Phyllis® and Lamont‘s cookbook, Recipes From The Road is available wherever books are sold.)
