A cranberry cookie recipe from Tuktoyaktuk Later in the year, when the temperatures drop way below freezing. there would be ice roads but, in the summer, the easiest way for us to get from Inuâ€" vik to Tuktoyaktuk was by air. he sun was shining. TThere wasn‘t any snow. The temperaâ€" ture was four degrees Celâ€" sius. Sled dogs and skiâ€" doos sat idle. It was midâ€" August in Tuktoyaktuk, Northwest Territories. We booked a day tour with Arctic Nature Tours. The flight took 30 minutes aboard a de Havilland Twin Otter. The maximum seatâ€" ing capacity was 19. â€"â€"Our flight consisted of four passengers, two pilots and a large pile of mailâ€" bags and other cargo desâ€" tined for the remote village on the shore of the Beauâ€" fort Sea. We spent the day with Maureen and James Pokiâ€" ak, who operate Ookpik Tours and Adventures in Tuktoyaktuk. Maureen was originally from Saskatchewan. Waterloo 7465092 1974 as a schoolteacher married James, an Inuit and adopted his way of life Muktuk was a bit more of a challenge. It‘s the layer of the whale between the outer skin and the inner blubber. Maureen boiled it and cut it in small cubes. It looked like and had the texture of tofu. She said that her family sometimes eats muktuk with HP sauce. Our main dish was caribou soup. Normally it only consists of boiled meat and broth but for our sakes, Maureen added onion and carrot. Maureen invited us into her modern home to samâ€" ple the authentic Inuit dishes that she prepares for her family. Our first appetizer was "Bipsi" or dried white fish. We pulled pieces of white fish from its airâ€"dried skin and dipped it in salt. Then we tried "Migo" or the airâ€" cured red meat from the backbone of the Beluga whale. It was like beef jerky. Maureen told us that the traditional Inuit diet is very high in fat, but because it is omega 3 fat, it‘s healthy. "The Inuit peoâ€" ple get their vitamins by eating the muktuk. Maureen makes cookies with lowâ€"bush cranberries that grow wild in the Arctic terrain. For our version of Maureen‘s recipe, we used the frozen cranberries that Judith Venaas, Regional Tourism Officer of the Northwest Territories had picked for us at the Arctic Circle. The lowâ€"bush Arctic cranberries are very tiny. When we made the recipe after we got home, we chopped the large local variety into small pieces. 1/2 teaspoon salt Frozen or fresh cranberries chopped small 3/4 cup chopped pecans or walnuts Combine the margarine, sugar and brown sugar until they are smooth.
