O Canada, In All Our Hearts Command t a time when there is Ajl fresh debate over the yrics of our national anthem, there‘s something patriotic and inspirational about spending time in the province where Canada It was Charlottetown, PE.1. where the Fathers of Confederation met in 1864 to discuss the union of the colonies. We‘ve been _ kicking around _ Prince _ Edward Island for the last few weeks with Catherine McKinnon. Catherine is married to Don Harron. We‘ve been doing a little stomping around with him as well. You might be better acquainted _ with Charlie Farquharson, of "Hee Haw" fame, than you are with Don Harron. They are one and the same and one is as funny as the other. The only difference is that Charlie is 50 this year and Don is 77. Catherine‘s _ signature song "Farewell To Nova Scotia" and her regular teleâ€" vision appearances on the Don Messer Show, Singalong Jubilee, and her own Catherine McKinnon Show created pleasure for many of us who are old enough to remember the 1960s. She was a key player in introducing Atlantic Canada‘s maritime music to the world. Catherine and Don are on stage Thursday, Friday and Saturday nights, until midâ€"September â€" at their "Carmody Comedy Barn" in Stanley Bridge, PE1. Their show is called, "Barn Agin." We are thankful that HH Catherine has shared with us her enthusiasm for Prince Edward Island, her love of Canada and her passion for singing. The flavours and the idea for this sandwich are also Catherine McKinnon‘s, and you can‘t get any more Canadian than that. Slice the tomatoes, crumâ€" ble the feta cheese, and wash the basil leaves. Cut the bagels in half and brush each half with olive oil. Toast the bagel halves under a broiler or face down in a heated frying pan. Place the sliced, toasted 20 tomato slices (2 to 3 tomatoes}) 4 tablespoons feta cheese 12 fresh basil leaves 4 plain bagels Olive oil 8 tablespoons balsamic vinaigrette BASMATO BAGEL SANDWICH (Makes 4 servings) N RIRTE bagel, openâ€"faced, on plates. Spread all eight halves with balsamic vinaigrette. Then, cover the bottom halves of each bagel with a generous layer of sliced tomatoes. Top the tomatoes with crumbled feta. Place two whole basil leaves on the feta. Garnish the top half of the openâ€" faced sandwich with a third basil leaf. Place the sundried tomaâ€" toes in a bow! and cover with boiling water. Set aside for 15 minutes. _ Peel the onion and garlic, cut in half and chop in a BALSAMIC VINAIGRETTE ({makes 2 cups) 15 sundried tomatoes 1/2 cup Spanish onion 2 medium size garlic cloves 1/2 cup balsamic vinegar 1 1/2 cups olive oil Visit Our "Tents" at the Cambridge Location blender. Drain the tomatoes, discard the water and add the tomatoes to the onion and garlic. Blend. Add the balsamic vinegar and blend again. Slowly add the olive oil while continuâ€" ing to blend.
