Wash the chicken and trim away excess fat. Fill a deep pot three quarters full of water and 1 (3 pound) chicken Marinade 3/4 cup honey 1/4 cup rice wine vineâ€" gar 3/4 cup dry white wine 1/4 cup apple cider vinegar Dipping sauce 2 tablespoons hoisin sauce 6 teaspoons orange marmalade 2 teaspoons light soya sauce CHICKEN (Makes 4 servings) PEKINGâ€"STYLE Bring the water to boil and drop in the chicken. Cover and return the water to a boil. place on high heat Boil for 5 minutes then remove the pot from the stove. Let the chicken stand in the boiling water for 30 mirutes. Remove the chicken from the water, pat dry, cool on the counter for 10 minâ€" utes then set in a bow! in the refrigerator to cool for at least 30 minutes. Combine the marinade ingredients and mix well. Remove the chicken from the refrigerator and with heavy scissors cut the bird in half, lengthwise, along the back and breastâ€" bones. Separate the wings. Place the chicken halves in a baking dish, cavity side down. Add the wings. Pour the marinade over the chicken and return to the refrigerator for one hour. Turn the chicken over and spoon the marinade over the chicken. Refrigerate _ overnight. Baste thoroughly with the marinade at least twice before cooking but not immediately before cookâ€" ing. _Preheat the oven to 375 degrees Fahrenheit. Place the chicken on a rack in a baking dish, breast side up and cook for 45 minutes. While the chicken is cdoking, â€" combine â€" the in‘%gdients of the dipping saude and mix well. Let the chicken sit for a few minutes before carving then serve with the dipping sauce.
