SAVORY MUSTARD MARINATED ROAST PORK (Makes 1 1/2 cups) Pork Roast In a saucepan, fry the diced onion in butter or margarine, stirring over high heat for three minutes. Add the vinegar, brown sugar, dates, peppercorns and bay leaf. Stir over mediâ€" umâ€"high heat for five minâ€" utes more. Discard the bay leaf. Remove saucepan from heat and stir in Dijon and prepared mustard. _ Refrigerate _ marinade until cool. Marinade can also be made a day ahead. Place pork roast in a deep dish. With a spoon, cover entire surface of pork roast with marinade. Cover dish and marinate pork for 24 hours in the refrigerator. Preâ€"heat oven to 450 degrees fahrenheit. Place pork roast with marinade coating in a roasting pan. Roast, uncovered, for 30 minutes at 450 degrees fahrenheit. Then turn oven down to 275 degrees Fahrenheit and roast 40 additional _ minutes | per pound or until a meat therâ€" mometer, inserted into the thickest part of the roast shows an internal temperaâ€" ture of 170 degrees. 1/4 cup Dijon mustard 1 tablespoon prepared mustard
