A crustless quiche and the Ku Klux Klan We are about to embark on an adventure. My frend, Lamâ€" ont Mackay, and I sold our houses and bought a +0â€"foot motorhome. We will roam North America, sample regional recipes, write travel arucles and create a cookbook. Lamont and 1 were business partners in the Melting Pot Restaurant, Trios Eatery and Trios Catering Company My Casual Cuisine column is now Recipes From The Road, which Lamont and 1 will coâ€" produce. Our aim is to provide you with interesting recipes and anecdotes from here and there. Recently, during minor motorhome repairs, we spent a night at The Victorian Guestâ€" house, a Bed and Breakfast, in Nappance, Indiana. On the way to the B&B, we witnessed a concentration of police, police dogs and police cars. The next morning, over breakâ€" fast, we learned that the KKK was in town to recruit new members. We were happy to hear that the locals weren‘t having any part of it This recipe is our variation of a delicious quiche we enjoyed at the breakfast table We eliminated the crust and used local sausage from St. Agatha. We think that our verâ€" sion is even better than the original We invite you to share our adventures and tecipes from the road 1/2 cup grated mozzarella cheese 1/2 cup grated cheddar cheese 8 ounces lean breakfast sausage 1 apple 1/2 cup raisins 14 cup brown sugar SAUSAGE AND APPLE CRUSTLESS QUICHE Reces rron tur Roap (serves 6) Brown the sausage by placâ€" ing it in a frying pan with 34 inch of water. Cook on medium high heat, turning the sausages and pricking the casâ€" ing at intervals with a sharp knife. When water has evaporated continue to cook until the sausages brown on the outside. Place browned sausage on a paper towel, to remove any excess grease, then place in the refrigerator to cool. Lightly spray a 10â€"inch glass ot ceramic pie plate with nonâ€" stick spray and set aside. Mix the two cheeses and spread them evenly on the botâ€" tom of the pie plate and set aside. Peel and core the apple and cut it into small cubes. Combine the apple, raisins, brown sugar, flour and cinnaâ€" mon in a bow!, mix well and set aside. Beat the eggs in a separate bow! Add the milk and salt and whisk well. Spread the sausage meat evenly on top of the cheese in the pie plate. Sprinkle the appleâ€"raisin mixture over the browned meat. Pour the milk and egg liquid over the other fillings Preheat oven to 350 degrees Fahrenheit, then bake for 45 minutes or until properly set Remove the sausage from the fridge and slice them into 1/4" thick pieces This quiche can be eaten warm or cold.
