PAGE 28 â€" WATERLOO CHRONICLE, WEDNESDAY APRIL 13, 1988 When the residents of Gilroy, California launched their first Garlic Festival in 1979, little did they realize that over the next years over half a million people would trek to their small town located in the Santa Clara Valley, 80 miles south of San Francisco. The three day festival involves 30 committes with 4,000 volunteers. Outdoor kitchens cooking garlic laced dishes, art and craft displays, sports events and musicians make up this colorful festival. With garlic‘s age old medicinal qualiâ€" ties, said to prevent high blood pressure, cancer and heart problems it‘s little wonder more and more people are sampling the magic bud. ‘"‘The Complete Garlic Lovers‘ Cookbook" is the tested recipes plus the winning finalists in contests from the Gilroy Garlic Festivals. â€" They include old favorites and international dishes using garlic in varying amounts â€" 1/2 teaspoon to 101 garlic buds per recipe. Appetizâ€" ers include garlic shrimp, egg rolls, fritters, spreads and dips. Soups feature Italian Sausâ€" age Soup, Mama‘s Potato Soup, gazpacho, and barroom chowder. You can count on a zesty Caesar salad with olive oil, sunflower seeds and seven cloves of garlic. Pasta dishes prove hearty fare with several versions of fettuccine. Garlic gives vegetables a boost in baked garlic potatoes and eggplant parmigiana. There‘s lots of variety using meats and seafood with garlic spareribs, garlic shrimp and verâ€" mouth garlic chicken. There‘s also tips on how to choose, store and banish odor from hands and breath. Which recipe to try first? You‘ll find this a big decision. 7@ World of Books The Complete Garlic Lovers‘® Cookbook. Fitzhenry & Whiteside. 349 pages. ‘"The Elegant Onion" by Betty Cavage is an onion cookbook which also includes antidoes, information and quotes, all having to do with the onion or its relatives in the allium family. From Carl Sandburg, "Life itself is like an onion; it has a bewildering number of layers. You peel them off, one by one, and sometimes you cry." The author tells why she wrote a cookbook entirely devoted to onion cuisine, gives it nutritive values, tips on how to grow, store, freeze and peel them without tears. She describes the leeks, scallions, shallots, chives and garlic and includes them in many recipes too. Appetizers will never be dull or bland with cheddar cheese shallot tartlets or lobsterâ€"filled party puffs. . Soups and salads include onion patch spring soup and spring dandelion watercress salad, a compatable duo for a memorable lunch. If you prefer onions alone, recipes for baked onions, barbeque onions and steamâ€"sauteed onions present the noble bulb in its most pristine form. Onions are born mixers, they can become best friends with other vegetables illustrated in onion and eggplant casserole with lentils or try them in an entree of garden patch lasagne. Leek and onion tart and the wagonwheel quiche combine pastry with asparagus, leeks and onions for a taste of Spring. As author Betty Cavage proves, the lowly onion can be elegant as a solo act or with a chorus of other foods. The onion will tantalize your taste buds and remind you of its presence long after you‘ve eaten it. The Elegant Onion. Betty Cavage.
