MARCH 19, A monthly review ot what's new on the newsstands in the month at April Paul Stuart Chronicle Special Science Digest may not be on every family's coffee table, but a good case could be made that everybody ought to read the April edition with its cover stories on health. Both the dangers of fast food and the facts and fiction of exercise are examined. The McDonald's, Burger King, Wendy's, Arby's, Har- dee's, Big Boy and Popeye fast food chains come in for some strong criticism of trying their french fries in beef tallow - "the worst kind of fat." Tazewell Banks, Director of the Heart Station at the D.C. General hospital. says of the effect of the fast food restaurants on the health of children: It seems that more than a hundred U.S. scientists and deans of medical and public health schools have "signed a petition urging the chains to stop frying foods in heavily saturated fats and to start labelling their products' ingredients." And fast food lovers should bear this chilling news in mind: A Science Digest study by an assistant professor at Harvard Medical School found that "... the fatty acid profiles of McDonald's Chicken McNuggets and Filet-O-Fish and Burger King's Chicken Sandwich and Whaler resembled beef more than chicken or fish. And according to industry figures, Burger King's Chicken Sandwich contains 42 grams of fat - equivalent to a pint-and-a-half of Sealtest ice cream." "We're clogging up their arteries. If you hate your children, you tell them to play in the street. Not quite as bad, but in the same direction, if you hate your children send them to those fast food places." As for exercise, it seems that most people are still far too sedentary. And yet, despite improving health for those who jog or walk briskly up to 15 miles a week, "as people do more than that, the improvements slow way down," according to Dallas scientist Steven Blair. "We don't have any evidence that higher and higher levels of exercise offer greater and greater protection."
