Timothys outlets recâ€" ommend the coneâ€"type filter drip system (such as Melitta) as the most economical and foolproof method. Other effective systems include stoveâ€"top espresso pots, Cona vacuum, or plunger pots, such as Melior or Instabrewer. The second main factor is freshâ€" ness. To ensure the peak of flavor, Weiler advises using only freshly roasted coffee beans. To store them and maintain freshness, she recommends an airtight container kept in the freezer. Grinding your own before brewing is best. Ground coffee should be stored in the refrigerator (not the freezer) and used within three weeks of roasting. _ What constitutes a good cup of coffee? According to Weiler, the most important element is to use only the highest quality coffee bean, such as the Arabica bean. These beans have more flavor and body, yet less caffeine and acids than robusta beans, which are used to blend commercial coffees and inâ€" stant brands. Today it‘s the most popular beverage around the globe, conâ€" sumed by an estimated 40 percent of the world. "I think people have much more of an awareness of a good cup of coffee," Weiler says. ‘"So many people come in and say they‘re getting tired of drinking instant coffee." Legend has it that fruits from the coffee tree were first used as a food by Ethiopian and other Afriâ€" can tribes before the birth of Christ. Then around 850 A.D. Ethiopians first concocted a bevâ€" erage made from the beans. Here in Waterloo Region coffee consumers are becoming more educated about coffee and much more discriminating, according to local businesswoman Joan Weiler. She and husband Bill own and operate two Timothys Coffees of the World franchises. Their Westâ€" mount Place store has been in business more than two years, and this past December the Kitchener couple opened an outlet in Conesâ€" toga Mall. Having a cup of coffee is one of life‘s small pleasures for many of us. Attracted by the aroma, flavor and uplifting effect of the amber brew, we give coffee an important place in our social interactions. Whether the setting is a relaxed getâ€"together with friends or a highâ€"level business meeting, cofâ€" fee seems to belong. Coffee drinkers are no longer settling for a mediocre brew. They want a good cup of coffee, says Joan Weiler, owner of Timothys Coffees of the World franchises in Waterloo. Karia Wheeler photo Having a cup of coffee is one of Then once coffee is brewed, it‘s fe‘s small pleasures for many of important to drink it immediately, s. Attracted by the aroma, flavor â€" not let it stand. ‘"After about a half nd uplifting effect of the amber hour, oils and acids break down rew, we give coffee an important â€" resulting in strong and bitter cofâ€" lace in our social interactions. fee." And another advantage for these coffee connoisseurs certainly must be never having to worry about where they‘ll get their next cup of good coffee! For the Kitchener couple, Tiâ€" mothys is a fullâ€"time job. Bill, a retired sales administrator, and Joan, a former office manager and sales coâ€"ordinator, work at the Conestoga Mall store six days a week. Their sons Bill and Bob help out. The Weilers have two fullâ€"time and two partâ€"time employees runâ€" ning the Westmount Place outlet. The rewards of having your own business are many, Joan says. Retailing is ‘"interesting, challengâ€" ing and very worthwhile." Interestingly, the chain started in 1975 with a Ph.D. thesis. Weiler explains that Timothy Snelgrove of London, Ont. "wrote his Ph.D. thesis at Western on coffee."" Soon after that, he opened a gourmet coffee outlet in London. The Weilers became involved because "my husband likes a good cup of coffee," Joan explains. While in London several years ago, they shopped at Snelgrove‘s first store. That was before Timothys became franchised. "Bill wonâ€" dered if a store like that would go in the Kitchenerâ€"Waterloo area." A couple of years later "he saw an ad in the Globe and Mail‘" and soon after, Waterloo‘s first Timothys store opened. The gourmet stores also feature flavored dessert coffees, such as chocolate, almond and cinnamon, as well as a complete line of brewing equipment. And Timothys offers a variety of imported teas and specialty drinks such as whipped hot chocolate, hot apple cider, espresso and cafe mocha. The success of the Timothys Coffees of the World chain has been impressive. There are now 25 stores in Ontario, Quebec and the Timothys Coffees of the World prides itself on being your gourmet beverage centre, where you will find a complete range of freshly roasted, top quality Arabica beans. Customers can request their own special grind, ‘"anyâ€" where from a Turkish grind to a percolator grind,‘"‘ Weilet exâ€" plains. Or for the true connoisseur, Timothys will sell raw beans for homeâ€"roasting and grinding.
