Frederick Huether was born in Wilmot Township near Petersburg, son of Friederich and Margaretha Huether. When he grew up he moved to Waterloo in 1870s where he apprenticed as a brewer in the Lion Brewery operated by his Uncle Christopher Huether. He also worked in the hotel, learning all about the hospitality industry. In 1881, he ventured into hotel ownership. The Market Hotel lately operated by a man named Englehart, was for sale and Huether bought it assuming the outstanding mortgage on the place. Although the hotel was in a favourable location, being opposite the Waterloo Market, Huether found it difficult to remain solvent. He found, in 1884, that he had to get a mortgage from Christopher Huether. During this time, it is noted that he supplied beer to the fireman stationed in the fire hall just across Albert St. By 1899, the hotel was still in debt and he had to sell to Julius Germann.
