Description
This is a handwritten biography of Adam Huether from the Ellis Little Papers. This biography has been transcribed exactly as written. Ellis Little was a local historian, who was the principal of Elizabeth Ziegler Public School. On his retirement, he invested much of his time in researching and writing about Waterloo's history. The Ellis Little Papers consist of extensive notes, papers and historical works.

Adam Huether was a native of, Epfenbach Grand Duchy, Baden, Germany and came with his family to Waterloo in 1853. He had been apprenticed as a brewer in his home land and in 1856 an opportunity arose to rent William Rebscher's Brewery located on King St at Princess St in Waterloo. When the owner died in 1856, Huether purchased the property. He named it The Lion Brewery and ran a small hotel called Huether that faced King St. He had two sons, Christopher, who stayed to help his father and Heinrich who moved up to Neustadt where he began a large brewery. After 1860 Adam gave control and ownership of the Brewery and Hotel to his son Christopher. As his obituary says he died in 1886 of old age at age 86 years and 2 days.
