RECIPE OF THE WEEK WEINER SALAD BAKE 3 tablespoons butter or margarine 3 tablespoons flour Z teaspoon salt 3/k teaspoon dry mustard L/h teaspoon pepper 1-1/2 cups milk 3/k Cup mayonnaise or salad dressing 6 medium-size potatoes, cooked, peeled, and diced x can (about 1 pound) cut green beans, drained ab medium-size onion, chopped 6 frankfurters, cut into 1/4-inch thick diagonal slices ie tablespoons buttered coarse bread crumbs Melt butter or margarine in small saucepan; remove from heat; blend in flour, salt, mustard, and pepper; slowly stir in e Cook over medium heat, stirring con- stantly, until mixture thickens and boils 1 minute; remove from heat; blend in mayonnaise or salad dressing; measure 1/4 cup sauce; Save. Fold potatoes, green beans, onion and three quarters of the frankfurter slices into remaining sauce; spoon into baking dish, 8- to 10-cup size, Arrange remaining frankfurters in a ring on top; spoon reserved 1/4 cup sauce over frankfurters; sprinkle with buttered crumbs.
