The Canadian turkey is ref^ardcd as one of the best imported birds in the British market and Canada is expect- ed to provide good supplies this Dec- ember. For last Christmas Canada ehipiKHl over 1,000,000 poundp ot chilled turkeys and chickens to Great Britain. These shipments all went forward packed, graded and inspected according to Canadian Government standards, and were received in good condition. The larger peixJentage of the tur- keps supplied to the Briti.sh market comes from the western provinces. The birds are killed and dressed by the producer and delivered immediate- ly to the nearest pool depot, where they are weighed and graded accord- ing to government standard. Ship- ment to the Atlantic seaboard is made by rail in pre-cooled refrigerator cars, and at the seaport a quick transfei is made to pre-cooled refrigerator? aboard ship. During the whole per- iod of shipment the birds are kept in a temperature which never varies more than two degrees, and they are as fresh on arrival in Britain as when .shipped from Western Canada.
