With walls painted daffodil yelâ€" low, and rows of fragrant herbs tucked among white picket fences, The Herb Garden is guaranteed to lift your spirits. Owner Elaine Neilsen says she has been gardening for as long as she can remember, and many of her earliest memories are of fragrances from her grandmother‘s garden. "I‘d been thinking of doing this for a while ," she explains, "and then one day I decided to stop thinking about it, and just do it." The result is a shop that is not only fragrant, cheerful and welcomâ€" ing, but also educational. In addition to stocking upwards of 70 to 80 difâ€" ferent kinds of herbs, (both dried and fresh), Neilsen also sells books on herbs, and keeps a small reference section for customers wanting to know more about herbs and their uses. Most of us are aware of the culiâ€" nary benefits of common herbs such as basil, sage or thyme, and we enjoy experimenting with a variety of herbed vinegars, but there is a more serious side to herbs which is growing in popularity.
