In lieu of the type of lighter fare that might bode better in summertime, hot food can go a long way toward making the cold winter winds a little more tolerable. Oftentimes, heading out first thing in the morning can be challenging when the weather's cold. That said, a good warm breakfast can do the trick in ways that cereal simply cannot. So before starting the day and bearing the brunt of the winter cold, consider the following recipe for Oatmeal Waffles. Oatmeal Waffles Makes 8 Servings 31/3 cups all-purpose flour 11/3 cups quick-cooking oatmeal or rolled oats 1/2 cup granulated sugar 2 tablespoons plus 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 7 large eggs 1 quart buttermilk 1/2 cup butter, melted Pinch ground cloves 1. In a large bowl, mix together the flour, oatmeal, sugar, baking powder, baking soda, salt, cinnamon, nutmeg and cloves and make a well in the center. 2. In a separate bowl, combine the eggs with the buttermilk and mix well. Pour the egg mixture into the center of the dry ingredients. Stir the mixture until the dry ingredients are about 3/4 moistened. Add the butter and stir only until the butter is worked in. Do not overmix. The batter is ready to use now, or it may be refrigerated for up to 12 hours. 3. Preheat a waffle iron to medium-high. Pour about 3/4 cup batter into the waffle iron and cook the waffles until they are crisp, golden and cooked through, 3 to 6 minutes per waffle. Serve at once. As an added bonus, consider topping your waffles with lemon curd, courtesy of the Culinary Institute of America. Lemon Curd Makes 2 Cups 9 large egg yolks 2/3 cup lemon juice 3/4 cups sugar 4 teaspoons lemon zest 14 tablespoons butter, cubed, at room temperature 1. Bring an inch or two of water to a simmer in a saucepan or the bottom of a double boiler. 2. Combine the egg yolks, lemon juice, sugar, and zest in a stainless mixing bowl or the top of a double boiler and whisk until the sugar is completely dissolved. Set the mixture over the simmering water and continue to whisk DINNER AND A MOVIE $ until the eggs are thickened and warm, about 12 minutes. 3. Add the butter a few pieces at a time, stirring until each addition is blended into the eggs before adding more. Continue stirring until all of the butter is blended into the curd. 4. Transfer the curd (straining if desired) to a bowl set in an ice bath and cool, stirring from time to time. Once the curd has reached room temperature it is ready to serve or store in a covered container in the refrigerator for up to three days.
