A wine that defies description Few wines have ever been proâ€" duced for the purpose of accompaâ€" nying food, yet many are quite adaptable and can turn a good meal into something special. There is no need for me to suggest a white wine with seafood as everybody knows that a Sauvignon Blanc is a great partner; nor is there a need to sugâ€" gest that a good Chianti goes well with pasta dishes. But what about game, or a wine that would go with heavy, seasoned foods such as lamb or roasted pork? If I could produce such a wine, The Regional Municipality of Halton is inviting all interâ€" ested parties to attend a Public Information Centre to view the final drawings of the Bronte Harbour Waterfront Park, Phase 1 Development, prior to tendering the construction works. The detail design of the Land Base has now been completed and construction will be undertaken in 2 stages. The first stage of construction is scheduled to be tendered in early January 1995. These construction works will include lakefilling between the breakwaters, installation of a sheet piled wall and rip rap basin edges, and extension of storm sewers. Depending on the availability of suitable fill material, initial lakefill may commence prior to January 1995. The second stage of construction involving landscaping, parking, and related surface works is scheduled for the summer of 1995. Regional and Consultant staff will be available to answer questions regarding the upcoming proposed construction works and project schedule. I would search out the healthiest of those bunches, pick them when they are fully ripened, then bring them home and hang them high up in my barn for drying; or perhaps, I would spread the berries on mats of straw until they take on the appearance of raisins. Later, perhaps in late February or early March, when most of the water would have evaporated, I would press the grapes carefully, extracting all the great flavors to be fermented in small wooden casks â€" for a wine that defies description. Of course, if that sounds like Canadian ice wine, let me remind you that Italy is somewhat warmer and my grapes would never freeze. Unlike ice wine, I would ferment the wine until almost all the sweetâ€" ness has gone, and I would end up with a dry wine that is full of body; perhaps, a little higher in alcohol than most wines, but so fruity and complex in body that it would strain all of my taste buds to the fullest. Such a wine would be a pleasure to drink on its own, but it also would compliment all strong meats, especially moose and venison, but still be delicate enough to accompaâ€" ny a good roast of pork or rack of Unfortunately for me, but fortuâ€" nately for those who like good wine, there is such a wine produced, and of all places in Italy, and those wines are called Amarone. For only $12.65 a bottle â€" probaâ€" bly much cheaper than I could proâ€" duce it â€" we have a general listed Amarone in most stores. The Amarone Classico from Negrar is listed under CSPC 44784 and one would be hardâ€"pressed to find a much better wine to accompany a dish of game. There are two more Amarone wines listed newly at Vintages. The Amarone Classico 1986 from Masi for $45 and the Amarone Classico 1988 from Paolo Boscaini for $20.95, two well respected Italian producers. NEW WINE BOOK Now that I have presented the perfect wine with our meal, you may take a look at the newest wine book to be released this week. The Oxford Companion To Wine by Jancis Robinson is in my opinion the most complete and easyâ€"toâ€" understand wine dictionary. Although my own library on wine is extensive, this new book â€" with its more than 1,000 pages â€" may be all I require from now on. Complete in every detail and well illustrated, one can find all there is to know about wine and wine related subjects. Available in most good book stores, the Oxford Companion To Wine by Oxford Press at $66.95 will surely become the bible to those who love wine. Mockingbird auditions Auditions for the production of To Kill a Mockingbird will be held Saturday, Nov. 26th between 1 and 4 p.m. and Tuesday, Nov. 29th beginâ€" ning at 7:30 p.m. at the rehearsal facility behind Speedy Autoglass. The big cast will require all types of people; black actors particularly welcome. The Oakville Drama Series proâ€" duction will run March 23rd to 25th and March 29th to April 1st at the Oakville Centre.
