'Cinnamon Bean Muffins 2 cups (500 mL) all purpose flour 1/2 cup (125 mL) sugar 1 Tbsp. (15 mL) baking powder 1 tsp. (5 mL) salt 1/4 tsp. (1 mL) cinnamon 2 eggs, beaten 1 8 oz. (227 mL) can Libby's -- Deep-Browned Beans 1/2 cup (125 mL) cream style corn 1/2 cup (125 mL) milk 1/2 cup (125 mL) cheddar cheese, grated 2 strips bacon, cooked and crumbled 1/2 cup (125 mL) shortening, melted Preheat oven to 400°F. Grease muffin tin. Combine flour, sugar, baking powder, salt and cinnamon together in a big bowl. In a separate bowl mix eggs, beans, corn, milk, cheese, bacon and shortening. Make a well in the dry ingredients and add liquid mix- ture, mixing only enough to moisten dry ingredients. Spoon mixture into muffin tin. Bake for 30 minutes. Yield: 12 muffins. This is a four-step process: © Type Approval: Before a utility uses a new type of meter, the manu- facturer must provide the depart- ment with a prototype, which is tested for performance, reliability and accuracy.
