Do you need iron? (NC) -- The minute amount of iron (Fe) in the body, about five grams in a healthy adult, is in no way indi- cative of its nutritional importance. This mineral is one of the most vital elements in body metabolism. It is stored in almost all body tissues, and iron reserves are found in the liver, spleen and bone marrow. Iron is a necessary part of hemo- globin in red blood cells, making possible the transport of oxygen and carbon dioxide. The blood cells continually wear out 'and break down, 'releasing their iron. Most of this iron can be recovered and re- used, but there is always a small loss. Thus, there is a continuous need for new supplies of iron from food. If iron intake is habitually low, and reserve supplies are grad- ually depleted, an iron deficiency anemia will develop. Need for iron Additional iron is lost every time blood is lost (e.g. during menstru- Foods that contain good supplies of iron include liver, red meats, egg yolks, dried legumes, leafy green vegetables and whole grain or en- riched cereals. Of these, meats have the highest availability of iron. There is no loss of this mineral dur- ing, storage, processing or. cooking of foods, except very small losses if cooking water is discarded. Iron is important in: building hemoglobin in red blood cells, to transport oxygen and carbon di- oxide and in preventing nutritional anemia. Common food sources of iron are: Liver , Red meats Egg yolks Potatoes Dried beans, peas and lentils; Green leafy vegetables Whole grain and enriched cereals, Flours, breads and pastas Patricia McClinton, M.Sc., R.P.
