Test Day in Thunder Bay on January 15 ad- vanced the following Terrace Bay Figure Skaters: Tracy Clark and Paula Bouchard. both passed the "Rocker Fox- trot", a Junior Silver compulsory dance. A luncheon was given to thank our super Ladies Auxiliary, and we had a visit from a Great Santa Claus, in every which way, Mr. Peter Monks fit the bill to perfect- ion, and gave out the Christmas stockings to each resident, and broke bread with us too. We thank everyone in Terrace Bay who helped to make Christmas this year extra special, with not only gifts, but just popping in and saying Hey, especially Father Pottie and friends, we always have a great time when he comes in. Theriault of Marathon, Ontario who was the lucky winner of the "You Can Be A Hilda's Fixin's Millionaire" draw Hope this results in a big win for you Mrs. Theriault. Our "Novice Preci- sion Team" now offi- cially known as_ the "'Super Superiors" will travel to North Bay on precision skating cham- pionships on February 12. The Super Superiors will be sporting new team outfits and sweat- ers, sponsored by Ko- dila's Home Hardware. Pork Steaks, Style These steaks are cook- ed until fork-tender in a spicy creole sauce of tomato, celery, green pepper, and onion. 2 tablespoons salad oil 2 pork shoulder steaks, each cut three quarters inch (about 2 pounds) 2 tablespoons all- purpose flour 1 medium celery stalk, diced 1 green pepper, diced 1 small onion, diced 1-16 ounce can tomatoes 2 teaspoons sugar 1 teaspoon salt 1/2 teaspoon hot pep- per sauce About 12 hours before serving: In 12-inch skillet over medium high heat, in hot salad oil, cook pork shoulder steaks till well browned on both sides. Remove steaks to plate, Creole set aside. Into drippings in skil- let, stir flour; cook, stir- ring constantly, till flour is dark brown (mixture will be thick). Add cel- ery, green pepper and onion; cook over medium heat till vege- tables are tender, about ten minutes, stirring of- ten. Return steaks to skillet; add tomatoes with their liquid, sugar, salt, and hot pepper sauce; over high heat, heat to boiling. Reduce heat to low; cover and simmer 45 minutes to 1 hour till pork is fork- tender, stirring occa- sionally. To serve, arrange pork steaks on warm platter. Skim off fat from sauce in skillet. Spoon vegetables and sauce over steaks. Makes 4 to 6 servings. That's Real Coffee!
