Our cook of the week is Vivian Ludington. and as you éknow she works for the News. She enjoys cooking because she loves to eat, but she doesn't make desserts because she says she is always on a diet. Vivian is originally from Ot- tawa but spent 3 years in B.C. She has 2 children one hus- band and a very strange dog called Muffin. In her spare time away from the office she says she enjoys sitting. The recipe that she has given is a favorite of her husband Jim's but the kids hate it. It is beef and kidney pie. Beef and Kidney Pie 1 beef kidney / 2 cut up pieces of bacon 1 lb. of stew beef or medium size round stéak whatever is on sale 2 onions chopped 1 bay leaf 2 tbsp. dark steak sauce 1 tsp. of salt 1 cup of beef bouillon or a cube melted in a cup of boiling water add mixed herbs and pepper to taste % cup of ketchup biscuit dough _ Scald kidney in salted water for | minute. Drain and split. Cut out the fat and tubes (the white stuff in the middle) then dice into | inch cubes. Fry the steak and onions for 5 minutes and add the kidney and all the other stuff except _ the pastry. Cover, simmer for one hour then peel potatoes and carrots and add them to the stew and simmer for another half hour (6 potatoes and six carrots). At the end of the half hour pour the whole thing into a casserole and cover it with the biscuit dough. Trim edges and gash the top. Bake in 425 oven for 20 minutes until the top is nice and brown. Then you sit down and enjoy it... On cold days -- particularly when ice fishing in the open -- you'll need thermal underwear, a warm shirt, a sweater, warm socks, a ski or snowmobile suit, a scarf and warmly-lined gloves. Top this off with a warm hat or toque to shield your head from the chilly winds and to retain body heat. And. watch the kids for frostbite! Watch them carefully for the first signs of getting cold, and get them warmed up as quick- ly as possible. Check the weather and ice conditions A little research will en- sure that you won't climb out of that warm bed on a cold winter morning for nothing. Call the. local MNR office, fish hut operator or tourist outfitter for local ice conditions. This is especially important if you plan to drill your own ice hole. Never walk out on the ice until it's at least 10 cen- timetres thick.. Local ice hut operators can usually tell you when it's safe. Use your head Remember to take along extra sweaters, blankets, sandwiches, coffee, tea or soup. And if you still feel cold, start for home before your teeth start to chatter in earnest. Although some hardy souls fish in the open, it's normal practice these days to fish inside a hut, usual- ly one that's rented from a fish hut operator on the lake. When you choose a lake and operator, make a reser- vation. Then phone beforehand to find out ex- actly how to get there. One of Shakespeare's most popular plays The Tempest will open with the fanfares of late 18th century pipers and drummers as audiences are invited on board the H.M.C.S. Magnus before setting sail for an exotic isle reputed to be inhabited by all sorts of sorcerers and spirits. Director Brian Rich- mond has chosen to move this famous 17th century play up two hundred years for a number of reasons. One of those reasons says Richmond is that "'I ama director who believes that the most important element in a production is to find a context which will unleash the important ideas in a text. for the audience. For me, it is interesting to examine the nature versus nurture, civilized man versus noble savage themes which was most influenced by the works of Jean Jacques Rousseau. He is of course, the French philosopher whose ideas concerning the nobility and grace of natural man have affected our ideas and institutions even to this day." Also Richmond adds, "The showman in me could not resist using the resources available from what I believe must be one of the most beautiful recreations of a historical site in North America. We are truly ex- cited that Old Fort William has agreed to co-produce this beautiful play with us, particularly because our building is located in what is actually the original Fort William site. After 200 years, Old Fort William will return to Old Fort William!"' Richmond has, once again, gathered an im- pressive team for this pro- duction.
