Add the onion and saute till limp. Set aside. Boil the potatoes in water and cover until soft enough to pierce easily with a small kitchen knife. Drain and peel. Mash while still hot in a large mixing bowl, add fish and anchovys. Cool slightly. Add egg yolks and beat mixture until 'smooth and light. Stir in sauteed onion, parsley and bread crumbs. Re- frigerate mix, until chil- led, about one hour. Form into patties about 3" in diameter. In a large heavy frying pan, heat half of the butter and oil until mixture begins to __ sizzle. 'Quickly dip fish bur- gers in cornstarch and shake them free of any excess. Fry a few at a time over fairly high heat till crisp and nice- ly browned on _ both sides. Add more oil and butter as needed. Serve at once! Handy Tips Dipping a screw in glue before replacing it makes it hold tighter. Stale beer is good for plants.
