As a result, he has qualified as a member of the Thunder Bay team which will be taking part in the National Cross-Country Championships in Halifax on November 21, 1971. Lonnie was up against stiff competition as the winner of the trials was the Ontario Provincial Champion, Bill Britten of Thunder Bay. Congratulations are extended to Lonnie for his outstanding performance, and best wishes are accord- ed him in his efforts at the national level. PARKS & RECREATION COMMITTEE MEETING A special meeting of the Parks and Recreation Committee with membersof the Town Council was held in the council chambers on November 10th. Special guest was Miss Marlene Lindsay, Commun- ity Consultant for the Youth and Recreation Branch, Department of Education. The meeting was opened by Reeve Harness and chaired by Mrs. F. Bryson. The meeting discussed a letter which had been forwarded by the Recreation Committee to Council outlining some of the difficulties it had encountered and suggesting possible solutions. Looking back on a very successful summer, it was noted that the work of the Recreation Committee could not be carried out effectively without a strong committee. The policy of the appoitment of members was re= viewed and it was decided to advertise for volunteer members to the Recreation Committee, inviting applications from persons interested in all aspects of community recreation. In view of the increasing responsibility of the Recreation Committee and the need for closer co-ordination of community programs it was decided that the appointment of a part time Co-ordinator of recreation for the community has become essen= tial. At a following Council meeting, the Recrea- tion Committee was given permission to advertise for this position with the appointment pending Council elections and the installation of the new Council early in January 1972. A zone meeting of the recreation committees in the area will be held on December 4th in Marathon with the meeting to commence at 10 a.m. in the Recreation facilities in that community. There are a variety of ways to prepare Maine sardines and a popular recipe is reprinted below. The little fish are rich in high-quality protein and, because they are packed in polyunsaturated oils, there seems to be no danger of increasing the cholesterol level in the blood stream. Try Sardine Recipe For Treat MAINE SARDINES RAVIGOTE -a hot entree- 1- 3 cup consomme or dry - white wine 1/4 cup cider vinegar 1 small white onion, minced 1/4 cup butter or margarine 1/4 cup flour 2 cups milk 1/4 cup heavy cream 1 teaspoon minced chives salt and pepper to taste 3 cans (4 oz. ea.) Maine Sardines 1 package frozen peas cooked 1/2 cup grated Parmesan cheese Combine consomme or wine, vinegar and onion. Sim- mer until reduced to about 1/3 cup liquid. Make a cream sauce by melting butter or mar- garine, stirring in flour and cooking until mixture bubbles. Add milk and stir until mixture thickens. Stir hot cream sauce into hot wine mixture. Simmer gently for about 4-5 minutes. Whip heavy cream very slight- ly to give it body and stir into sauce. Add chives. Season with salt and popper to taste. Drain sardines and place in casse- role. Pour sauce over sardines. Garnish with peas and grated cheese. Place in hot oven (450 degrees F.) for 10 min- utes until cheese is bubbly. Yield: 4 servings. it, pt A at al EE
