Christopher, son of Adam Huether, was born in Germany and as his father had been, he became a brewer. When the family moved to Waterloo in 1853, he helped his Dad when he took over Rebscher's Brewery and later in their own Lion Brewery. After 1860 Christopher became the owner of the hotel and brewery. He worked very hard to build up the business and constructed a larger hotel on King St. Business was looking up when in 1880 he remodeled the hotel and added the beautiful Victorian facade. The establishment was now a show place in the hospitality industry. When Christopher died in 1898 ownership passed to Chris N. who found that a large mortgage on the place was outstanding. The holder of the mortgage decided to foreclose and Christopher Nicholas lost the property.
